The oven project: Chocolate Chips Muffin



Muffin's fever

Who doesn’t love chocolate, rite? I came across this muffin’s recipe from The Pink Stilettos blog and it leads me to the source which is Nigella Lawson.

It was really easy and everyone without baking experience (read:me) can do it! The utmost important is no electronic mixer needed (I have yet to buy one). I have tried this a few times with minor alterations here and there.

So, this is your weekend project peeps! Have a nice weekend…
 Ingredients
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3 tablespoons best quality cocoa powder
  • 3/4 cup superfine sugar
  • ½ teaspoon salt
  • 3/4 cup semisweet chocolate chips, plus 1/4 cup for sprinkling
  • 3/4 cup milk
  • ¼ sour cream
  • 1/3 cup plus 2 teaspoons vegetable oil (alternative: butter, but it makes the muffin a little bit wet. I prefer to have a mixture of both)
  • 1 egg
  • 1 teaspoon pure vanilla extract
The ingredients
Directions
Preheat the oven to 180c - 200c (depends on your oven).

Put the flour, baking powder, baking soda, cocoa, sugar, salt and 3/4 cup of the chocolate chips into a large bowl.

Pour all the liquid ingredients into a measuring jug.

Mix the dry and wet ingredients together, remembering that a lumpy batter makes the best muffins.

Spoon into the prepared muffin cases.

Sprinkle the remaining 1/4 cup chocolate chips on top

Bake for 20 minutes or until the muffins are dark, risen and springy.

My bedtime story and lullaby (Twilight version)

I have watched Twilight: Breaking Dawn, twice. Yes, twice. The first round was in the cinema and another round in the comfort of my own house (My sister tempted me with the uncensored downloaded version).

Did I enjoy the movie? Yes, and I can’t wait for the Part 2. So, out of curiosity and anxiety, I decided to read the final book! The book was thick and it seems forever before I can finish the book. However, thank you for smart phone apps and technology (Yes, I read the PDF version …sorry…), I was able to finish the book in a week! I read it everywhere. I read it in a car (thank you to the heavy traffic and Paparil for driving), lunch break and at night (mostly). I enjoy the book as much as I enjoy the movie. It was a happy ending after all.

Oh..oh..I also love the songs in the movie! My favorite song is the one that was played during the wedding vow. It was a lovely song (but the lyric was weird). It suits the scene perfectly. Here is the song, enjoy peeps!

I wish I'm an angry bird


I feel mad. Mad as in “I am angry”. I don’t know who or what am I angry with. Urgghh… Obviously, I’m not mad at either of my family member. I’m just mad at myself, maybe?

The sulky mode began as soon as I stepped onto the office. So, it must be the office. The hard cold stoned office. Yes, it must be. The office is so freaking cold!! My brain, my hand and everything freeze when the ‘winter’ hit. But, today the office is not that cold. The weather in office is acceptable.

So, what is the next escape goat? Do I mad at someone in office? Or maybe I’m mad at the company itself? Yes, maybe… I can feel blood rushing into my head and the feeling is unbearable. But suddenly one of my colleagues reminded me… “Kerja adalah amanah”. Yes, she was right! I should be thankful for whatever I have today and stop complaining. Ok, back to work.
