In the mood of...Mushroom Risotto


Cooking mood is back in town. I’m in the mood to try new recipe for my little family (which consist of 2 picky eater, yes Paparil & Lil Rara).

A few months back, I got to try risotto for the first time. I always watch those chefs in MasterChef or Hell Kitchen cook risotto. So, I was wondering how it taste? It looks like baby food with decorations…Hehe..

Apparently, risotto not that bad and I kind of like it. So, why not trying to cook it at home, rite? Tadaaa, here I am trying to cook my own risotto!

Where did I take the recipe? After googling for a few minutes, I used this 3 recipe for guidance. Mix and match after considering what I have in my little kitchen.




My version:

Chicken stock (2 cube of Maggi Chicken stock + 1 litre of water + 1 bay leaf)
2 handful of shitake & oyster mushroom (up to you which mushroom you want to use)
2 tbsp olive oil
2 tbsp butter
1 large onion (finely chopped)
2 garlic (finely chopped)
Parsley (finely chopped)
1 cup of sushi rice (I can’t find any risotto rice in Giant)
Salt & pepper
Garnishing:
Butter
Parmesan Cheese

1.   Boiled the chicken stock and then turn down the heat and let it simmer.

2.   In another pan, fry the mushroom with olive oil for about 3 minutes/until it softened. Set aside.

3.   Heat olive oil and butter, add in the onion, garlic and parsley. Keep the heat very low and fry about 10 minutes.

4.   Add in the rice and turn up the heat. Keep stirring until it become translucent.

5.  Then, add in 1 cup of the chicken stock and low down the heat. Stir gently and let the rice absorb the liquid. Repeat the step for a few times until the rice is al dente or up to your preference. (About 15-20 minutes)

6.  Remove from heat and stir in the mushroom, butter, parmesan cheese, salt and pepper.

7.  Tips from Jamie Oliver: “Place a lid on the pan and allow to sit for 2 minutes. This is the most important part of making the perfect risotto, as this is when it becomes outrageously creamy and oozy like it should be.”

8.  Let’s eat!

Toy for adult

* This is supposed to be posted last week! But, I failed to do it due to various reasons. (Skema punya ayat :-P) *

Today is 11.11.11. I want to make it a special day. I decided to make a comeback on this date! (chewwaahh..poyo je). Hmm...I don’t know where to start and how to write. Once the momentum is lost, it’s hard to start again.

I bought a new toy recently. It’s not for Rara but for me. I have been contemplating for quite a long time whether to buy it or not to buy it. But after a financial restructuring I manage to squeeze a budget for it. Yes, I live in a tight budget. It’s not good and I know that I have to do something about it. 

Ok, back to the toy story. I bought an oven! Taaaraaaa!


My new toy: Cornell 35L

I love it! I have baked a few things with this oven. So far so good. No major disaster. My first attempt is a Bread Pudding. I’m not a fan of bread pudding but my husband loves it. So, I decided to give it a try. I have once tasted a bread pudding which is suitable for my liking. It was at the breakfast’s buffet in Hotel Vistana, Kuantan.

The Spaghetti Adventure, anyone interested?

Have I told you that Rara is a picky eater? I think I have in one of my post. One day she’ll be eating like a lot (a lot for her mean 7-10 spoons of food) and another day she’ll just eat nothing. I hope when she grew older she’ll get the idea of eating every day. At the moment, I’ll just bear with her appetite and encourage her to eat more. *Sigh*.

Nowadays, spaghetti is one of her favorite food. Previously, she prefers simple, plain, no sauce, no color type of spaghetti dishes. But recently, she started to eat spaghetti with tomato sauce or in Bolognese style. The trick with her is to force her to try the food (same goes to Paparil..). If not she would just happily eat plain rice, plain noodle, and plain everything!

Thus, due to her current appetite, we usually eat at a place with spaghetti serving in their menu (Pizza Hut, Secret Recipe and bla..bla..bla..). After a while we get bored with the choices that we have. So, it’s time to try new thing! Among the ‘new’ that we tried are The Spaghetti Farm at Mid Valley and The Capricciosa at Sunway Pyramid.

I read some reviews from other blog on the spaghetti served here. It has a mix review. Some says it’s good and some says it’s the worst spaghetti ever. We had Chicken Bolognese and Black Pepper Chicken. For me both are edible and quite good! Even Rara and Paparil like it too. Maybe it’s not the best spaghetti I ever had but I have no problem coming back here next time we are in Mid Valley craving for spaghetti.

It’s supposed to be Lasagna. But it looks and taste different from the lasagna that I ever had. It’s more like a soup? The pasta is too little with a lot of tomato sauce. Is this really lasagna? I start asking myself after half way eating it.

I would love to try their other dishes and hopes it turns out better than the lasagna. The price range for a plate of pasta here range approximately from RM15 - RM30. They also serve fresh pasta here! I would like to try those next times.

Ayam Goreng Kunyit Emak Hanis Zalikha


Kadang-kadang saya suka jalan-jalan ke blog masak memasak untuk menjamu mata. Lagi syok kalau terjumpa resepi-resepi yang teramat senang tapi nampak menarik dan sedap. Semalam, jalan-jalan ke blog emak kepada si cantik manis Hanis Zalikha. Terjumpa resepi ayam goreng kunyit.

(Eh, kenapa macam bunyi pantun empat kerat je ayat-ayat di atas tu?)

Kadang-kadang saya suka jalan-jalan ke blog masak memasak untuk menjamu mata,

Ok, back to the recipe thingy.

Mungkin ada sesetengah orang akan terdetik dan berkata “Ish, ayam goreng kunyit pun nak kena refer resepi ke? Gaul je dengan kunyit dan garam sudah…” Jangan tak tau, sejak dah berkawan baik dengan Makcik Google, kalau boleh nak tanak nasi pun nak cari resepi! (ok, yang ni tipu).

Kenapa tertarik dengan resepi dari Emak Hanis Zalikha ni? Sebab…dia tambah sos ikan dalam perapan ayam, which I never done it before.

Ayam Goreng Kunyit. Nampak sedapkan?

So, here is the recipe. Credit to Nani Rostam, emak Hanis Zalikha (berapa kali nak sebut daaa..)

Resepi Ayam Goreng Kunyit

200 gm isi ayam dipotong kecil-kecil

5 batang kacang panjang dipotong seinci seinci
1 biji bawang besar holland
3 ulas bawang putih
5 biji cili padi
1 batang serai
1 sudu teh kunyit
1 sudu makan sos ikan
1 sudu teh gula
1 sudu makan cuka
garam dan perasa secukup rasa.

Cara-caranya :- Gaul isi ayam dengan kunyit, gula dan sos ikan. Perap sekejap dan goreng dalam minyak sehingga agak kekuningan. Ketepikan. Tumiskan bawang besar yang telah dihiris, cili padi, serai dan bawang putih yang telah diketuk. Masukkan semula ayam dan kacang panjang. Bubuh garam, perasa dan cuka. Angkat dan hidang.

Oh, cuma satu bahan je yang saya tambah dan tiada dalam resepi. Daun limau purut. Hehehe..Itu jer...
